Hey, friends. Susan here. I used to always do a meal plan on my old blog, and I'm excited to start it again on this one. This weekend was crazy, and I have a fairly busy week ahead, plus a party. Here's the plan:
Monday: Meatless Monday challenge! Doing an alfredo veggie lasagna. Spencer won't eat broccoli, so I'm taking a few recipes and improvising, of course. We will definitely review it!
Tuesday-Crockpot Salsa chicken. I will be using this in two meals this week. Tonight- enchiladas. I'm going to be doing a recipe of this as well, but it's seriously super simple. You'll love it. Also homemade enchilada sauce. Of course.
Wednesday- We will be going out to eat tonight. Where is TBD, but you can bet there will be a review!
Thursday- Chicken and veggie bowls, featuring that crock pot chicken from the other day, cilantro lime rice, and beans.
Friday- fourth of July. Surely we will go out? To a BBQ? Any invites???
Saturday- We are hosting a BBQ. So we will do hot dogs and burgers because that's easy. I'll do chips and potato salad- my own recipe! Baked beans, corn on the cob, and mac and cheese. Then for desserts I'll have some fluffernutter brownies (I love these things!) avalanche bars and something strawberry. I'll let you know.
Sunday- leftovers. Obvs.
So that's our week! Lots of blog fodder, especially with all that stuff I"m making on Saturday. Do you have plans for the fourth?
